The Éleveur 2020 Gevrey-Chambertin 1er Cru Aux Combottes Rouge is a divine, 100% single-vineyard Pinot Noir from a gem of a vineyard - Aux Combottes is an exceptional climat in the southwest corner of one of the finest appellations in the Côte de Nuits. The sun shines long into the evening, and gravelly limestone soils (the fossils of ancient sea lilies, starfish, and urchins) produce concentrated grapes that yield a rich, alluring wine. The darkest of the Éleveur Burgundies on the pour, the core is almost impenetrable; game, peony, wild berries, new leather, and exotic spices pull you deep into the glass. Terroir-driven on the palate, concentrated earth, red-to-black cherry, saline, and leather are framed by firm, powdery tannins (that will soften with time) bolstered by deftly balanced acidity. The finish is vanilla-flecked with a touch of pepper spice, accenting long, drawn out elegant florals and cherry fruit tones.
